The Revolation Delta is a state-of-the-art chocolate tempering machine, melting and tempering 3 to pounds of pure chocolate in approximately 1 hour. It maintains perfect temper conditions for hours and hours, and like all of ChocoVision's machinery, is equipped with a removable, dishwasher safe bowl, baffle and a set of three scrapers. The Rev Delta will be ideal for chocolate makers, whether in their home kitchen or a sophisticated laboratory environment. Recipe storage: Stores up to 26 different chocolate recipes (melt, temper and delta points). This is for producing multiple varieties of chocolates whose characteristics do not conform to the Delta's default settings. Extended temper mode: Allows the chocolate to stay in perfect temper for 18 to 24 hours--compared with the X3210, which keeps the temper for only 1 to 1.5 hours.
