The Revolation Delta is a state-of-the-art chocolate tempering machine, melting and tempering 3 to pounds of pure chocolate in approximately 1 hour. It maintains perfect temper conditions for hours and hours, and like all of ChocoVision's machinery, is equipped with a removable, dishwasher safe bowl, baffle and a set of three scrapers. The Rev Delta will be ideal for chocolate makers, whether in their home kitchen or a sophisticated laboratory environment. Features Largest capacity - automatically tempers up to lbs of chocolate in under one hour. Blue LCD with white lettering. Fully automatic micro-processor using forced hot air. Bowl Pause. Manual Temperature Adjustment (up to 130 degrees during the Melt Cycle, 100 degrees in Temper Mode). Overnight (Standby) Mode. Set and hold temper point to 2/10ths of a degree Fahrenheit. Customized heat control. Sleek, stainless steel design. Extended temper mode (holds temper for up to 2 days!). Stores up to 29 chocolate recipes. Compound melt mode allows you to melt chocolate without tempering. Recipe storage: Stores up to 26 different chocolate recipes (melt, temper and delta points). This is for producing multiple varieties of chocolates whose characteristics do not conform to the Delta's default settings. Extended temper mode: Allows the chocolate to stay in perfect temper for 18 to 24 hours--compared with the X3210, which keeps the temper for only 1 to 1.5 hours. Machine timer/delayed start: Begin melt cycle up to 72 hours from the time of setting for chocolate to melt at specified time.
