The no-leak loose bottom feature allows for a smooth release of your cake and compliments your baked dessert with a no carve finish. Cook up delectable desserts for any special occasion with this high quality commercial cheesecake pan! A four-inch-deep Fat Daddio's pan provides the best results in an oven set at 300° F. While the pan itself is designed to take temperatures up to 550° F, such heat is ill-advised for baking a cake. The rule of thumb on the 4' deep pans is keep the temperature low (300 degrees) and bake slow. The result is simply amazing and yields the tallest, most towering cake you can imagine. In pans that are larger than 9' you can further improve the baking time and rise with a heating core or a few flower nails in the center. Care of Anodized Bakeware (PDF).
