The Revolation Delta is a state-of-the-art chocolate tempering machine, melting and tempering 3 to 10 pounds of pure chocolate in approximately 1 hour. It maintains perfect temper conditions for hours and hours, and like all of ChocoVision's machinery, is equipped with a removable, dishwasher safe bowl, baffle and a set of three scrapers. The Chocovision Delta has the same assets as the X3210--the same dimensional footprint, almost all of the same components, and the same capacity to melt and temper chocolate--and more: Manual mode: Allows non-cocoa-butter-based chocolates (compound) to be melted and maintained at a specific temperature without going through the tempering process. Recipe storage: Stores up to 26 different chocolate recipes (melt, temper and delta points). This is for producing multiple varieties of chocolates whose characteristics do not conform to the Delta's default settings.
