Progetto Crostate ('Project Tarts') Ring/Band/Frame Stainless steel Satin finish Thickness 1/32 inch (1mm) Hole size 3/64 inch (1.2mm) The collaborative project of Pavoni with Chef Gianluca Fusto, this ring is designed for reducing the toil in making tarts and having them come out tasting and looking perfect. The holes make your pastry cleave to the ring during baking, the hold averting collapse of the pastry edge. The cleaving of tart to ring will not make it hard to remove the pastry--provided you grease the ring before you line it with pastry dough. The tart and the ring will part before the baking is over.
