Progetto Crostate ('Project Tarts') Ring/Band/Frame Stainless steel Satin finish Thickness 1/32 inch (1mm) Hole size 3/64 inch (1.2mm) Working in concert with Chef Gianluca Fusto, Pavoni designed Progetto Crostate rings for ease in making tarts and appeal in the taste and look of the finished food. The holes make your pastry hold fast to the ring during baking to keep the pastry edge from collapsing. The hold is maintained during baking, but releases before the baking is over, the tart and the ring detaching. Just be sure to grease the ring before putting in the pastry dough.
