The straight low edges ensure good evaporation of humidity and excellent caramelisation. Made of extra thick copper with a stainless steel interior and mirror polish finish. Stainless-steel interior offers easy cleaning and durability. 2mm-thick copper body heats and cools fast and evenly. This pan can be used with electric, gas, and vitroceramic heat sources, EXCEPT induction.The handle is riveted ergonomic and made of cast stainless steel which stays cool.
