Therefore, place the jewel on the dessert just before serving. Dry Surfaces are best; fondant, icing.. This product is made from a sugar substitute, Isomalt. The jewels are shipped with a thin coat of vegetable oil to protect the shine and prevent sticking. Sometimes the jewels will be cloudy due to temperature fluctuations during shipping.
