From the combination of Pavoni Italia's know-how and the talent of French pastry chef Johan Martin come seven new micro-perforated bands dedicated to the world of Viennoiseries. Dimensions: 100mm dia. 45mm (4.0' 1.9') The micro holes let the shortcrust pastry to hang onto the frame, avoiding the border collapsing during baking and a perfect browning of the base. The adhesion of tart to ring does not make cleaning difficult--as long as you grease the ring before you insert the dough, the ring releases its grip on the tart before the baking is over. Shape of ring stays the same throughout baking Baked tart has uniform edges Tart is equally done all over Stainless Steel.
