Victorinox 8 x 3" Chinese Cleaver, Curved Blade, Walnut Wood Handle 40090 Durable natural wood handles. Wood handles provide good grip, and most people consider them to be the most attractive. However they should hand-washed, not dishwasher safe. You can occasionally treat wood handles with mineral oil to prolong their finish. A cleaver is a large, rectangular knife that is used in cutting meat. Very heavy, enabling the knife to cut through bone and joints with sheer force. Some models have a hole in the end to allow them to be hung up easily. Cleavers are an essential tool for any restaurant that prepares its own meat. High carbon stainless steel blades are hand finished in Switzerland by skilled craftsmen. These blades do not discolor or stain. These knives are specially ground and tempered so that they can be re-sharpened over and over again, keeping a sharp edge throughout their lifetime. Each Victorinox knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground down, polished, etched and finished.
