The 3Z's user-friendly display screen makes monitoring and controlling your chocolate simple. As with other Chocovision machines, this unit uses forced hot air as its heat source. As your ganaches, cookies, pralines, pretzels, bars (et al.) travel on the Enrober, they will be coated over their entire surfaces, bottom included. Skimmer 30 Non-stop flow of chocolate The Chocovision Skimmer is a belt, pulley and motor system that connects to a tempering unit's baffle, and will create a continuously dispensing flow of chocolate (at variable speed) through its bucket or spout into molds or onto individual pieces. The Skimmer is also helpful in reducing splatter and the spread of moisture or other contaminants into a pool of chocolate, while decreasing ergonomic strain with its automation. The Skimmer is easy to disassemble for cleaning. The skimmer for the 3Z machine is 19.5 inches in height, or 12.4 inches above the baffle. 110 volts, 50 watts, 0.3 amps.
